Ways To Gather

Here are some no-fuss ways to get together any day of the week. Spontaneous or planned, all of these occasions are instant mood-lifters.

~Take a hike or a bike ride and bring along a loaf of bread, some cheese, nuts, water, and chocolate to snack on along the way.

~Meet at the beach, the park, or a river, and bring along a mini camp stove and some sausages to cook up for everyone. Pack mustard, and if you can find salty pretzel buns, they are chef’s kiss.

~Invite folks over for a chili taste-off. Cornbread is a must.

~A potluck is always a winner, no matter where you host or meet up. Sunset picnics with a view are my personal favorite.

~Eating popsicles on the porch is a fun idea for any warm day. The food never needs to be fancy to guarantee a good time.

~Backyard happy hour with no cooking required is hard to beat. Cheese, crackers, a bit of salami, olives, grapes, and something special to drink—you’ve got yourself a party.

~Meet up at the farmer’s market and task everyone with buying something to share. Enjoy a picnic feast together from your bounty.

~Keep a standing Friday-night date with another couple, your book club group, or your best pals. Switch up where you meet and who’s responsible for food so no one gets hangout burnout.

~Squeeze in an early-morning breakfast and coffee as the sun is rising.

Cut the carrots into thirds. Bring a large pot of water to a boil, add the carrots, and cook for 15 minutes, or until tender when pierced with a fork. Drain and blot dry with paper towels.

Preheat the oven to 400°F (200°C). Put the carrots on a rimmed baking sheet and toss with 1/4 cup (60ml) of the olive oil, the garlic, and the seeds and spice blend to coat. Roast for 30 minutes, or until caramelized and golden. Remove from the oven and allow to cool.

Combine the preserved lemon, lemon juice, tahini, harissa, water, and cooled carrots in a food processor and process to a puree. With the motor running, drizzle in the remaining 1/2 cup (120 ml) olive oil and process until smooth. Serve with crudités.

Harissa-Roasted Carrot Hummus

Serves 6 to 8

5 large or 7 small carrots

3/4 cup (180 ml) olive oil

2 garlic cloves, minced

1/2 teaspoon cumin seeds

1/2 teaspoon coriander seeds

1/2 teaspoon nigella seeds

1/2 teaspoon berbere spice blend

Rind of 1/2 preserved lemon

1 tablespoon lemon juice

1/3 cup (80ml) tahini

1 tablespoon jarred harissa
(if using harissa powder or harissa from a tube, you will need less)

2 tablespoons water

Crudités for serving
(use your favorite raw vegetables)
